Paris Sigalas stands as one of Greece’s most iconic winemakers and a pioneer in elevating the Assyrtiko grape and Santorini’s indigenous varieties to international acclaim. Originally trained as a mathematician, his passion for viticulture led him to establish Sigalas Winery in 1991 in Baxedes, Oia. Under his leadership, the winery became a benchmark for quality and innovation, combining modern winemaking techniques with a deep respect for Santorini’s ancient vineyard traditions.
In 2020, he launched OENO P, a new project dedicated to crafting limited-edition, premium wines while continuing his research into the island’s unique terroir. Sigalas emphasizes that great wine is both a science and an art, reflecting a philosophy that marries precision with creativity.
A vocal advocate for preserving Santorini’s historic vineyards — some of the oldest in the world and untouched by phylloxera — Sigalas has consistently highlighted the urgent need to protect this “living museum” from the pressures of overdevelopment. His commitment ensures that Santorini’s vineyards will continue to produce some of Europe’s finest white wines for generations to come.
